Slice each chicken breast in half horizontally to create thinner cutlets. Season with salt and pepper on both sides.
In one bowl, beat the egg. In another bowl, combine the breadcrumbs and grated Parmesan.
Dip each chicken cutlet in the egg, then press into the breadcrumb mixture to coat evenly.
Preheat the air fryer to 360°F (182°C) for 2-3 minutes. Lightly spray the basket with oil.
Place the chicken in the air fryer basket in a single layer. Air fry for 6 minutes.
Flip the chicken cutlets. Spoon marinara sauce on each piece, then top with shredded mozzarella.
Air fry for another 3-4 minutes, until the cheese is melted and the internal temperature reaches 165°F (74°C).
Remove from the air fryer, garnish with fresh basil or parsley if desired, and serve immediately.
