Ingredients
  

  • 2 medium zucchinis, cut into fry-sized sticks
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • to taste salt and black pepper
  • as needed cooking spray

Instructions
 

  • Preheat air fryer to 400°F (200°C).
  • Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of panko, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  • Coat each zucchini stick first in flour, then egg, then breadcrumb mixture, pressing to adhere.
  • Place zucchini fries in a single layer in the air fryer basket. Lightly spray with cooking spray.
  • Air fry for 8–10 minutes, flipping halfway through, until golden and crispy.
  • Serve warm with marinara sauce, ranch dressing, or garlic aioli.
