Juicy chops are seared and simmered in a flavorful apple cider reduction with hints of garlic, onion, herbs, and a touch of cream. A perfect autumn-inspired dish that's both comforting and elegant.

Instructions
Season chops generously with salt and pepper on both sides.
Heat olive oil and butter in a large skillet over medium-high heat. Add chops and sear for 3–4 minutes per side until golden brown. Remove chops from skillet and set aside.
Reduce heat to medium. Add sliced onions to the skillet and sauté until softened, about 4 minutes. Add minced garlic and cook for 1 minute more.
Pour in apple cider and stir in Dijon mustard and thyme. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
Return chops to the skillet and add sliced apples. Cover and simmer for 10–12 minutes, or until chops reach an internal temperature of 145°F (63°C).
Optional: Mix cornstarch and water in a small bowl, then stir into the sauce to thicken. Simmer for 2–3 more minutes.
Serve chops with apple-onion mixture spooned over the top. Garnish with additional fresh herbs or sautéed apple slices if desired.
