Ingredients
  

  • 2 apples, cored and chopped
  • 1/2 cup walnuts, roughly chopped (toasted if desired)
  • 1/2 cup dried cranberries
  • 4 cups mixed salad greens
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar (or balsamic vinegar)
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon Dijon mustard
  • to taste salt and pepper

Instructions
 

  • In a large mixing bowl, combine the chopped apples, walnuts, dried cranberries, and mixed greens.
  • If desired, sprinkle crumbled feta cheese over the top of the salad for added creaminess.
  • In a small bowl or jar, whisk together olive oil, apple cider vinegar (or balsamic vinegar), honey (or maple syrup), Dijon mustard, salt, and pepper to make the dressing.
  • Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.
  • Serve immediately for the freshest taste. If not serving right away, store the dressing separately and toss just before serving.
