Ingredients
  

  • 1 lb ground turkey
  • 1 tablespoon olive oil or sesame oil
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh ginger (minced or grated)
  • 1 onion (diced)
  • 2 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1/2 cup water chestnuts (chopped)
  • 2 green onions (sliced)
  • 1 head butter lettuce or romaine leaves
  • optional shredded carrots
  • optional crushed peanuts
  • optional sriracha
  • optional lime wedges

Instructions
 

  • Heat oil in a large skillet over medium-high heat.
  • Add diced onion and sauté for 2-3 minutes until softened.
  • Add garlic and ginger; cook for 30 seconds until fragrant.
  • Add ground turkey and cook until browned, breaking it up as it cooks.
  • Stir in soy sauce, hoisin sauce, and rice vinegar. Simmer for 2-3 minutes.
  • Add chopped water chestnuts and green onions; stir to combine.
  • Remove from heat and spoon the turkey mixture into lettuce leaves.
  • Top with optional garnishes like shredded carrots, crushed peanuts, or a squeeze of sriracha. Serve immediately.
