These soft and chewy Bailey's Irish Cream Cookies are infused with rich Irish cream flavor, perfect for St. Patrick's Day or any occasion. Customize with chocolate chips, glaze, or nuts for a decadent treat!
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy using an electric mixer.
Beat in the egg, vanilla extract, and Bailey's Irish Cream until fully combined.
In a separate bowl, whisk together the flour, baking soda, salt, and cocoa powder (if using).
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
If using, fold in the chocolate chips.
Scoop tablespoon-sized portions of dough and roll into balls. Place them on the prepared baking sheet, spacing about 2 inches apart.
Bake for 8-10 minutes, or until the edges are set but the centers are still soft.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Optional: Prepare a Bailey's glaze by whisking together 1 cup powdered sugar, 2 tablespoons Bailey's Irish Cream, and 1/2 teaspoon vanilla extract. Drizzle over cooled cookies.
