Ingredients
  

  • 3 pounds chicken thighs, bone-in, skin-on
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar, packed
  • 1/3 cup ketchup
  • 1/4 cup chicken broth
  • 2 tablespoons fresh ginger, grated
  • 2 cloves garlic, minced
  • 2 teaspoons sesame oil
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • to taste optional fresh pineapple slices, for garnish
  • to taste optional green onions, sliced for garnish
  • to taste optional sesame seeds, for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C). Arrange the chicken thighs in a single layer in a large baking dish.
  • In a saucepan, combine pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, grated ginger, minced garlic, and sesame oil. Heat over medium heat and bring to a low boil.
  • Simmer the sauce for about 10 minutes, stirring occasionally, until it thickens slightly.
  • In a small bowl, whisk together cornstarch and water to create a slurry. Stir the slurry into the sauce, whisking continuously until it thickens further.
  • Pour the sauce over the chicken thighs, ensuring they are fully coated.
  • Bake the chicken for 45–60 minutes, or until the internal temperature reaches 165°F (74°C), and the sauce has caramelized on the chicken. Make sure to baste the chicken with the sauce halfway through the cooking process.
  • Allow the chicken to rest for a few minutes before serving.
  • Garnish with fresh pineapple slices, green onions, and sesame seeds before serving for extra flavor and a beautiful presentation.
