Instructions
Preheat your oven to 375°F (190°C). Arrange the chicken thighs in a single layer in a large baking dish.
In a saucepan, combine pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, grated ginger, minced garlic, and sesame oil. Heat over medium heat and bring to a low boil.
Simmer the sauce for about 10 minutes, stirring occasionally, until it thickens slightly.
In a small bowl, whisk together cornstarch and water to create a slurry. Stir the slurry into the sauce, whisking continuously until it thickens further.
Pour the sauce over the chicken thighs, ensuring they are fully coated.
