Ingredients

  • 4 cups cubed bread (French, brioche, or challah)
  • 2 ripe bananas, mashed
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, melted

Instructions

  • Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking dish with butter.
  • Spread the cubed bread evenly in the prepared baking dish.
  • In a bowl, whisk together mashed bananas, milk, heavy cream, granulated sugar, brown sugar, eggs, vanilla extract, cinnamon, nutmeg, and salt until fully combined.
  • Pour the custard mixture over the bread, gently pressing down to make sure the bread absorbs the liquid. Let it sit for 10-15 minutes.
  • Drizzle melted butter over the top of the bread pudding mixture.
  • Bake for 40-45 minutes, or until the pudding is golden brown and set in the center.
  • Let it cool slightly, then dust with powdered sugar or drizzle with caramel sauce. Serve warm with whipped cream.
