Banana bread pudding is a warm, comforting dessert made with overripe bananas and stale bread, baked in a creamy custard base. It’s the perfect dessert for brunch, family gatherings, or cozy nights in, with hints of cinnamon, vanilla, and caramelized bananas.
Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking dish with butter.
Spread the cubed bread evenly in the prepared baking dish.
In a bowl, whisk together mashed bananas, milk, heavy cream, granulated sugar, brown sugar, eggs, vanilla extract, cinnamon, nutmeg, and salt until fully combined.
Pour the custard mixture over the bread, gently pressing down to make sure the bread absorbs the liquid. Let it sit for 10-15 minutes.
Drizzle melted butter over the top of the bread pudding mixture.
Bake for 40-45 minutes, or until the pudding is golden brown and set in the center.
