Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 1 cup buttermilk
  • 1 cup cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • as needed vegetable oil for frying
  • 0.5 cup mayonnaise
  • 0.25 cup sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon honey
  • 2 tablespoons green onions, chopped (for garnish)
  • 1 tablespoon sesame seeds (optional, for garnish)
  • to taste fresh lime wedges (optional)

Instructions
 

  • In a bowl, combine shrimp and buttermilk; marinate for 10 minutes.
  • Whisk together mayonnaise, sweet chili sauce, sriracha, and honey in a small bowl to make the Bang Bang sauce; set aside.
  • In a shallow dish, mix cornstarch, garlic powder, smoked paprika, salt, and black pepper.
  • Remove shrimp from buttermilk, letting excess drip off, then coat each shrimp in the cornstarch mixture.
  • Heat 2 inches of vegetable oil in a deep skillet to 350°F (175°C).
  • Fry shrimp in batches for 2-3 minutes per side until golden and crispy; drain on paper towels.
  • Toss fried shrimp gently in the Bang Bang sauce until evenly coated.
  • Transfer shrimp to a serving plate; garnish with green onions, sesame seeds, and lime wedges. Serve immediately.
