Ingredients
  

  • 1 medium head cauliflower, cut into bite-sized florets
  • 3/4 cup all-purpose flour (or gluten-free flour)
  • 3/4 cup unsweetened plant-based milk (e.g., almond, oat, or soy)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika

  • 1/2 cup BBQ sauce (plus more for drizzling)
  • 2 cups cooked rice or quinoa
  • 1 cup shredded red cabbage or spinach
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/4 cup sliced cucumber or thinly sliced red onion (optional)
  • to taste fresh cilantro or green onions, chopped (for garnish)
  • 1 lime, cut into wedges (for serving)

Instructions
 

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a mixing bowl, whisk together the flour, plant-based milk, garlic powder, smoked paprika, salt, and pepper until smooth.
  • Dip each cauliflower floret into the batter, shake off any excess, and place on the prepared baking sheet in a single layer.
  • Bake for 20 minutes, flipping halfway through, until golden and slightly crisp.
  • Remove from the oven, toss the cauliflower in BBQ sauce, and return to the oven for an additional 10–15 minutes until sticky and caramelized.
  • While the cauliflower bakes, prepare the bowl ingredients: cook rice or quinoa, slice avocado, chop veggies, and gather toppings.
  • Assemble the bowls by adding a base of grains, then layer with red cabbage or spinach, cherry tomatoes, avocado, cucumber, and BBQ cauliflower bites.
  • Garnish with fresh cilantro or green onions, drizzle with extra BBQ sauce, and serve with lime wedges.

Notes

You can use store-bought or homemade BBQ sauce—smoky, sweet, or spicy, it’s your call. Make it a wrap or taco instead of a bowl for a fun variation. Great for meal prep—store components separately and assemble when ready to eat.
