Ingredients
  

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (6 oz) tomato paste
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tsp Italian seasoning
  • 1 tsp sugar (optional)
  • 1 cup sour cream
  • 1 cup ricotta cheese
  • 2 cups cooked elbow macaroni (or any pasta)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 to taste salt
  • 1 to taste pepper
  • 1 tbsp fresh parsley, for garnish (optional)

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Break it up into small pieces. Drain any excess fat.
  • Add the chopped onion and minced garlic to the skillet with the beef and sauté until the onion softens.
  • Stir in the tomato sauce, tomato paste, diced tomatoes, Italian seasoning, and sugar (if desired). Season with salt and pepper. Let simmer for 10 minutes.
  • While the beef mixture is simmering, cook the pasta according to package instructions. Drain and set aside.
  • In a large bowl, combine the cooked pasta, sour cream, ricotta cheese, and half of the mozzarella cheese. Mix until well combined.
  • Add the beef mixture to the pasta and stir to incorporate.
  • Transfer the pasta mixture into a greased 9x13-inch baking dish. Sprinkle the remaining mozzarella and Parmesan cheese on top.
  • Bake for 25-30 minutes, or until the cheese is melted and golden brown.
  • Let the casserole sit for a few minutes before serving. Garnish with fresh parsley if desired.
