Beef Lombardi Casserole is a hearty and comforting layered dish made with seasoned ground beef, creamy cheeses, and pasta, all baked to golden perfection. It’s the perfect dish for busy weeknights and family dinners!
In a large skillet, cook the ground beef over medium heat until browned. Break it up into small pieces. Drain any excess fat.
Add the chopped onion and minced garlic to the skillet with the beef and sauté until the onion softens.
Stir in the tomato sauce, tomato paste, diced tomatoes, Italian seasoning, and sugar (if desired). Season with salt and pepper. Let simmer for 10 minutes.
While the beef mixture is simmering, cook the pasta according to package instructions. Drain and set aside.
In a large bowl, combine the cooked pasta, sour cream, ricotta cheese, and half of the mozzarella cheese. Mix until well combined.
Add the beef mixture to the pasta and stir to incorporate.
Transfer the pasta mixture into a greased 9x13-inch baking dish. Sprinkle the remaining mozzarella and Parmesan cheese on top.
Bake for 25-30 minutes, or until the cheese is melted and golden brown.
