Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a muffin tin.
In a mixing bowl, combine the sausage, cream cheese, cheddar cheese, garlic powder, onion powder, and paprika. Stir until fully combined.
Take each half slice of beef and wrap it around the edges of a muffin tin, securing the ends with a toothpick to form a 'cup.'
Fill each beef cup generously with the sausage mixture, but do not overfill as the sausage will expand while baking.
Place a jalapeño slice on top of each filled Beef shot, if desired, for a spicy kick.
Bake for 25-30 minutes or until the beef is crispy and the sausage is fully cooked.
For extra crispy beef, broil the Beef shots for an additional 2-3 minutes. Remove from the oven and let cool slightly before serving.
