1cupshredded mozzarella cheese (plus extra for topping)
½cupgrated Parmesan cheese

Instructions
In a large pot, brown the Italian sausage over medium heat until fully cooked. Drain excess fat if necessary.
Add the diced onion to the pot and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
Add the crushed tomatoes, broth, Italian seasoning, salt, and pepper to the pot. Bring the mixture to a simmer and cook for about 15 minutes.
While the soup base simmers, add the broken lasagna noodles. Cook according to package instructions, usually 8-10 minutes, stirring occasionally to prevent sticking.
