Ingredients
  

  • 1 pound Italian sausage (mild or spicy)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 teaspoons Italian seasoning
  • to taste salt and pepper
  • 8 ounces lasagna noodles, broken into pieces
  • 15 ounces ricotta cheese
  • 1 cup shredded mozzarella cheese (plus extra for topping)
  • ½ cup grated Parmesan cheese
  • 1 large egg (optional, for added creaminess)
  • to taste fresh basil or parsley, for garnish

Instructions
 

  • In a large pot, brown the Italian sausage over medium heat until fully cooked. Drain excess fat if necessary.
  • Add the diced onion to the pot and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  • Add the crushed tomatoes, broth, Italian seasoning, salt, and pepper to the pot. Bring the mixture to a simmer and cook for about 15 minutes.
  • While the soup base simmers, add the broken lasagna noodles. Cook according to package instructions, usually 8-10 minutes, stirring occasionally to prevent sticking.
  • In a separate bowl, combine the ricotta cheese, shredded mozzarella, grated Parmesan, and egg (if using). Mix until smooth and creamy.
  • Once the noodles are cooked, ladle the soup into bowls. Add a generous dollop of the cheese mixture on top, then sprinkle with additional mozzarella cheese.
  • Garnish with fresh basil or parsley and serve hot!
