This smoky, savory stir-fry features tender steak, chewy udon noodles, and a rich, umami-packed sauce. The Blackstone griddle adds a restaurant-quality sear, making it perfect for a weeknight meal or a backyard cookout!
1lbsteak (ribeye, sirloin, or flank), thinly sliced

2packspre-cooked udon noodles (about 14 oz total)

Instructions
In a bowl, mix soy sauce, oyster sauce, sesame oil, garlic powder, and black pepper. Toss in the sliced steak and marinate for at least 10 minutes while you prep other ingredients.
In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, brown sugar, rice vinegar, sriracha, and sesame oil. Set aside.
Heat the Blackstone to medium-high heat (about 400°F). Add vegetable oil and spread it evenly over the surface.
Place the marinated steak on the hot griddle and sear for 2-3 minutes per side, until browned. Push the steak to the cooler side of the griddle.
Add butter, garlic, onions, bell peppers, and mushrooms to the griddle. Stir-fry for 2-3 minutes until slightly softened.
Add the udon noodles, breaking them apart gently with tongs.
Pour the prepared sauce over the noodles and toss to coat evenly. Mix the steak back in and stir everything together for 1-2 more minutes until fully heated.
Sprinkle with green onions, sesame seeds, and red pepper flakes if desired. Serve hot and enjoy!
