Ingredients
  

  • 2 cups fresh blueberries
  • 2 cups corn kernels (fresh or thawed frozen)
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced cucumber
  • 1/4 cup finely chopped red onion
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 1 tbsp honey or maple syrup
  • to taste salt
  • to taste black pepper

Instructions
 

  • In a large bowl, combine the blueberries, corn, diced avocado, cherry tomatoes, cucumber, red onion, and cilantro.
  • In a small bowl or jar, whisk together the olive oil, lime juice, honey (or maple syrup), salt, and pepper until well combined.
  • Pour the dressing over the salad and toss gently to combine.
  • Serve immediately, or chill for up to 1 hour before serving.
