Ingredients
  

  • 2 cups fresh or frozen blueberries
  • 1 cup plain Greek yogurt (whole or low-fat)
  • 0.5 cup heavy cream or coconut cream
  • 0.33 cup granulated sugar, honey, or maple syrup
  • 1 teaspoon lemon juice
  • 0.5 teaspoon vanilla extract (optional)

Instructions
 

  • Combine blueberries, Greek yogurt, heavy cream (or coconut cream), sweetener, lemon juice, and vanilla extract in a blender or food processor.
  • Blend until smooth and creamy, tasting and adjusting sweetness as needed.
  • Pour the mixture into an ice cream maker and churn according to manufacturer’s instructions for 20–25 minutes until thick and creamy.
  • Transfer the churned frozen yogurt to a lidded container and freeze for at least 2 hours for a firmer texture.
  • Before serving, let sit at room temperature for 5–10 minutes to soften slightly for easy scooping.
  • Serve topped with fresh blueberries, a drizzle of honey, or fresh mint if desired.
