Ingredients
  

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cooked breakfast sausage or crumbled halal sausage
  • 1 cup shredded cheddar cheese
  • 8 small flour or corn tortillas
  • 2 tablespoons butter
  • as needed cooking spray or olive oil
  • to serve salsa, sour cream, or avocado (optional)

Instructions
 

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray with cooking spray or brush with oil.
  • In a medium bowl, whisk together eggs, milk, salt, and black pepper.
  • In a nonstick skillet over medium heat, melt butter. Add egg mixture and gently scramble until just set. Remove from heat and stir in cooked sausage.
  • Warm tortillas in the microwave for 20 seconds to make them pliable.
  • Place a spoonful of scrambled eggs and sausage mixture onto each tortilla. Sprinkle with cheese.
  • Roll tortillas tightly and place seam side down on the prepared baking sheet.
  • Lightly spray the tops of the taquitos with cooking spray to help them crisp up.
  • Bake for 12-15 minutes or until golden brown and crispy.
  • Serve warm with salsa, sour cream, or avocado if desired.
