Burrata Bruschetta

Ingredients
  

  • 1 loaf crusty bread (ciabatta or baguette), sliced
  • 2 tbsp extra virgin olive oil
  • 2 cups cherry tomatoes, halved
  • 2 cloves garlic, peeled
  • to taste salt
  • to taste freshly ground black pepper
  • 1 ball burrata cheese
  • 1/4 cup fresh basil leaves, chopped or torn
  • 2 tbsp balsamic glaze

Instructions
 

  • Preheat the oven to 400°F (200°C). Arrange the bread slices on a baking sheet and brush both sides with olive oil.
  • Toast the bread in the oven for 8–10 minutes, flipping halfway through, until golden brown and crispy. Once done, rub each slice with a peeled garlic clove.
  • In a mixing bowl, combine the halved cherry tomatoes, a drizzle of olive oil, salt, pepper, and half of the chopped basil. Let the mixture sit for 10 minutes to marinate.
  • Tear the burrata into pieces and set aside.
  • Place a generous portion of burrata on each toasted bread slice, then spoon the marinated tomato mixture over the cheese.
  • Drizzle balsamic glaze over the top, garnish with the remaining fresh basil, and serve immediately while the bread is still warm and crisp.
