Ingredients
  

  • 2 lobster tails lobster tails (4-6 oz each, shells removed)
  • 1/2 cup unsalted butter High quality butter recommended
  • 2 tablespoons water For beurre monté
  • 2 cloves garlic Minced
  • 1 tablespoon fresh lemon juice
  • to taste salt
  • to taste white or black pepper
  • 1 tablespoon fresh chives or parsley For garnish

Instructions
 

  • Using kitchen shears, carefully cut along the top of each lobster shell and gently remove the meat, keeping it attached at the base. Season with salt and white pepper.
  • In a small saucepan, heat 2 tablespoons of water over low heat. Gradually whisk in butter, one tablespoon at a time, until fully emulsified, creating a smooth beurre monté sauce.
  • Stir in minced garlic and lemon juice, and allow the flavors to infuse for about 1-2 minutes.
  • Maintain the butter at a low temperature (160-180°F). Submerge the lobster tails into the butter, ensuring they are fully coated. Cook for 5-7 minutes, occasionally turning to ensure even cooking, until the lobster is opaque and tender.
  • Once done, remove the lobster tails from the butter and plate them. Drizzle with additional butter and garnish with fresh chives or parsley.
  • Serve immediately with lemon wedges for a burst of fresh citrus flavor.
