In a small bowl, combine the smoked paprika, onion powder, garlic powder, dried thyme, dried oregano, cayenne pepper, black pepper, and salt.
Pat the chicken breasts dry with paper towels. Brush both sides with olive oil or melted butter.
Generously coat both sides of the chicken breasts with the Cajun seasoning blend.
Heat a cast-iron skillet over medium-high heat for about 5 minutes until hot.
Place the chicken breasts in the hot skillet and cook for 5-6 minutes per side, or until blackened and the internal temperature reaches 165°F (74°C).
