Ingredients
  

  • 20 oz cheese tortellini (fresh or frozen)
  • 1 1/2 cups cherry tomatoes, halved
  • 1 cup fresh mozzarella balls (bocconcini or ciliegine), halved if large
  • 1/2 cup fresh basil leaves, chopped or whole
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic glaze (or balsamic vinegar)
  • 1 teaspoon garlic powder (optional)
  • to taste salt and black pepper
  • 1/4 cup pine nuts, toasted (optional)
  • 1/2 unit avocado, diced (optional)
  • as desired grilled chicken or shrimp (optional)

Instructions
 

  • Bring a large pot of salted water to a boil.
  • Cook the tortellini according to package instructions until al dente.
  • Drain and rinse under cold water to stop the cooking process, then set aside.
  • In a large bowl, combine the cooked tortellini, cherry tomatoes, mozzarella balls, and fresh basil.
  • In a small bowl, whisk together olive oil, balsamic glaze, garlic powder, salt, and pepper.
  • Pour the dressing over the salad and toss gently until evenly coated.
  • Refrigerate for 15–20 minutes before serving for flavors to meld.
  • Drizzle with extra balsamic glaze and garnish with fresh basil before serving.
