Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning store-bought or homemade
  • 1 cup diced tomatoes canned or fresh
  • 1/2 cup black beans rinsed and drained
  • 1/2 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas burrito size
  • 1/2 cup sour cream for serving
  • 1/4 cup fresh cilantro for garnish
  • as needed salsa or hot sauce optional

Instructions
 

  • In a skillet over medium heat, cook the ground beef until browned. Drain any excess grease.
  • Stir in taco seasoning, diced tomatoes, black beans, and corn. Let it simmer for 5 minutes.
  • Lay out the tortillas and add a generous scoop of the beef mixture to the center of each tortilla. Sprinkle with shredded cheddar and Monterey Jack cheese.
  • Fold the tortillas into wraps and toast them in a skillet for 1-2 minutes on each side until golden brown and crispy.
  • Slice the wraps in half and serve with sour cream, salsa, or fresh cilantro.
