Ingredients
  

  • 3 cups uncooked medium pasta shells
  • 3 tablespoons butter
  • 1 medium onion, finely diced
  • 1/3 cup diced red bell pepper
  • 1/2 teaspoon seasoned salt
  • 1 teaspoon chili powder
  • 1 can (10.5 oz) cream of chicken soup
  • 1 1/3 cups milk
  • 3 cups shredded sharp cheddar cheese, divided
  • 1/3 cup shredded Parmesan cheese
  • 1 can (4 oz) mild green chiles
  • 3 cups cooked, chopped chicken

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Cook pasta until al dente according to package instructions. Drain and set aside.
  • In a skillet, melt butter over medium heat. Add onion and red bell pepper; sauté until soft.
  • Stir in seasoned salt and chili powder into the sautéed vegetables.
  • In a large mixing bowl, combine cream of chicken soup, milk, 2 cups of cheddar cheese, Parmesan cheese, green chiles, and sautéed veggies.
  • Add cooked pasta and chopped chicken to the mixture and stir until evenly coated.
  • Pour mixture into a greased 9x13 inch baking dish and top with remaining 1 cup cheddar cheese.
  • Bake for 30–35 minutes, until bubbly and cheese is golden brown.
  • Let sit for a few minutes before serving.
