Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup cherry pie filling
  • 1/3 cup all-purpose flour (for streusel)
  • 1/4 cup brown sugar (for streusel)
  • 1/4 teaspoon ground cinnamon (for streusel)
  • 2 tablespoons unsalted butter, cold and cubed (for streusel)

Instructions
 

  • Preheat oven to 375°F (190°C) and line a muffin tin with paper liners or grease well.
  • In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  • In another bowl, mix melted butter, buttermilk, eggs, and vanilla extract until smooth.
  • Add wet ingredients to dry ingredients and stir until just combined. Do not overmix.
  • Gently fold in the cherry pie filling, leaving some cherry streaks visible.
  • Divide batter evenly among muffin cups, filling each about 3/4 full.
  • To make the streusel topping, combine flour, brown sugar, and cinnamon. Cut in cold butter until mixture resembles coarse crumbs.
  • Sprinkle streusel evenly over each muffin.
  • Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
  • Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.
