In a large pot, heat olive oil over medium heat.
Add the diced onion, carrots, and celery. Sauté for 5–6 minutes until softened.
Stir in minced garlic, turmeric, ginger, and red pepper flakes. Cook for 1 minute.
Add diced zucchini, yellow squash, and chicken broth. Bring to a boil.
Reduce heat and simmer for 10–12 minutes, until the veggies are tender.
Stir in the cooked chicken and leafy greens. Simmer for 3–5 more minutes.
Add lemon juice, and season with salt and pepper to taste.
Serve hot, garnished with fresh parsley if desired.
