▢ 2 tablespoons olive oil ▢ 1 kg boneless, skinless chicken thighs or breasts, cut into bite-sized pieces ▢ 1 medium onion, chopped ▢ 3 cloves garlic, minced ▢ 3 medium carrots, sliced ▢ 2 stalks celery, sliced ▢ 500 g potatoes, diced ▢ 1 cup frozen peas ▢ 1 cup green beans, trimmed and cut into pieces (optional) ▢ 4 cups low sodium chicken broth ▢ 1 cup water ▢ 2 tablespoons tomato paste ▢ 1 teaspoon dried thyme ▢ 1 teaspoon dried rosemary ▢ 1 teaspoon smoked paprika ▢ 1 teaspoon salt (or to taste) ▢ 1/2 teaspoon black pepper ▢ 1 bay leaf ▢ 2 tablespoons all-purpose flour or cornstarch (optional, for thickening) ▢ 2 tablespoons water (for slurry, if thickening)
Heat olive oil in a large pot or Dutch oven over medium-high heat.
Add chicken pieces, season with salt and pepper, and sear until lightly browned (5–7 minutes). Remove and set aside.
In the same pot, add a bit more oil if needed. Sauté onion, garlic, carrots, and celery until softened (4–5 minutes).
Stir in tomato paste, then add chicken broth, water, thyme, rosemary, smoked paprika, bay leaf, salt, pepper, and potatoes.
Return the chicken to the pot and bring the stew to a boil.
Reduce heat to low, cover, and simmer for 30 minutes until the chicken is cooked through and vegetables are tender.
Mix flour or cornstarch with water to create a slurry. Stir it into the stew and simmer 5 more minutes to thicken.
Stir in peas and green beans (if using) and cook for another 5 minutes until heated through.
Remove the bay leaf. Garnish with chopped fresh parsley and serve hot with crusty bread or biscuits.
