Ingredients
  

  • 2 tablespoons olive oil
  • 1 kg boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 stalks celery, sliced
  • 500 g potatoes, diced
  • 1 cup frozen peas
  • 1 cup green beans, trimmed and cut into pieces (optional)
  • 4 cups low sodium chicken broth
  • 1 cup water
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 2 tablespoons all-purpose flour or cornstarch (optional, for thickening)
  • 2 tablespoons water (for slurry, if thickening)

Instructions
 

  • Heat olive oil in a large pot or Dutch oven over medium-high heat.
  • Add chicken pieces, season with salt and pepper, and sear until lightly browned (5–7 minutes). Remove and set aside.
  • In the same pot, add a bit more oil if needed. Sauté onion, garlic, carrots, and celery until softened (4–5 minutes).
  • Stir in tomato paste, then add chicken broth, water, thyme, rosemary, smoked paprika, bay leaf, salt, pepper, and potatoes.
  • Return the chicken to the pot and bring the stew to a boil.
  • Reduce heat to low, cover, and simmer for 30 minutes until the chicken is cooked through and vegetables are tender.
  • Mix flour or cornstarch with water to create a slurry. Stir it into the stew and simmer 5 more minutes to thicken.
  • Stir in peas and green beans (if using) and cook for another 5 minutes until heated through.
  • Remove the bay leaf. Garnish with chopped fresh parsley and serve hot with crusty bread or biscuits.
