Ingredients
  

  • 4 pieces boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • to taste salt and black pepper
  • 1 cup fresh flat-leaf parsley, finely chopped
  • 2 tablespoons fresh oregano, finely chopped (or 1 tablespoon dried)
  • 3 cloves garlic, minced
  • 0.5 teaspoon red pepper flakes (optional)
  • 0.33 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon fresh lemon juice
  • to taste salt and black pepper

Instructions
 

  • Season chicken breasts with salt and black pepper and rub with olive oil.
  • Preheat grill or skillet over medium-high heat and cook chicken for 5–7 minutes per side until cooked through and juices run clear (internal temperature 165°F).
  • While chicken cooks, combine parsley, oregano, garlic, red pepper flakes, olive oil, red wine vinegar, lemon juice, salt, and pepper in a bowl. Stir well.
  • Let chimichurri sit for at least 10 minutes to let flavors meld.
  • Serve grilled chicken topped generously with chimichurri sauce.
