Ingredients
  

  • 6 cups mixed salad greens (arugula, spinach, or baby kale)
  • 1/2 cup pomegranate seeds
  • 1/2 cup dried cranberries
  • 1/2 cup candied pecans or walnuts, toasted
  • 1/2 cup crumbled goat cheese or feta
  • 1 apple, thinly sliced
  • 3 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar (or lemon juice)
  • to taste salt and black pepper

Instructions
 

  • In a small bowl or jar, whisk together olive oil, Dijon mustard, honey, apple cider vinegar, salt, and pepper until smooth and emulsified.
  • Arrange mixed greens on a large serving platter or in a salad bowl.
  • Scatter pomegranate seeds, dried cranberries, and thinly sliced apple evenly over the greens.
  • Sprinkle toasted candied pecans or walnuts and crumbled goat cheese or feta on top.
  • Drizzle the honey mustard dressing over the salad just before serving and toss gently to combine.
  • Serve immediately as a fresh, festive side dish.
