Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 teaspoons lime zest
  • 3 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions
 

  • In a bowl, whisk together olive oil, lime juice, lime zest, garlic, cilantro, cumin, chili powder, salt, and pepper.
  • Place chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Marinate in the refrigerator for at least 30 minutes or up to 4 hours.
  • Preheat grill or skillet over medium-high heat. Remove chicken from marinade and discard the marinade.
  • Grill or cook chicken for 6–7 minutes per side, or until internal temperature reaches 165°F (74°C).
  • Let the chicken rest for 5 minutes before slicing. Garnish with extra cilantro and lime wedges if desired.
