Cilantro Lime Chicken is a juicy and zesty dish made with a vibrant marinade of lime juice, garlic, and fresh cilantro. Perfect for grilling, baking, or pan-searing, it works great for tacos, salads, or rice bowls.
In a bowl, whisk together olive oil, lime juice, lime zest, garlic, cilantro, cumin, chili powder, salt, and pepper.
Place chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Marinate in the refrigerator for at least 30 minutes or up to 4 hours.
Preheat grill or skillet over medium-high heat. Remove chicken from marinade and discard the marinade.
Grill or cook chicken for 6–7 minutes per side, or until internal temperature reaches 165°F (74°C).
Let the chicken rest for 5 minutes before slicing. Garnish with extra cilantro and lime wedges if desired.
