Cilantro Lime Chicken Thighs

Ingredients
  

  • 4 boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 2 limes, juiced (about 4 tbsp)
  • 1 lime, zested
  • 3 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder or paprika
  • 1 tsp honey or maple syrup (optional)
  • salt and black pepper, to taste
  • extra lime wedges and chopped cilantro, for serving (optional)

Instructions
 

  • In a bowl or zip-top bag, whisk olive oil, lime juice, lime zest, garlic, cilantro, cumin, chili powder, salt, and pepper. Stir in honey if using.
  • Add chicken thighs and toss to coat well. Marinate in the refrigerator for at least 30 minutes and up to 8 hours.
  • Heat a large skillet or grill pan over medium-high and lightly oil the surface.
  • Remove chicken from marinade, letting excess drip off. Cook 5–7 minutes per side until golden and the internal temperature reaches 165°F (74°C).
  • Transfer to a plate and rest 5 minutes. Slice or serve whole, garnishing with extra cilantro and lime wedges.
