Ingredients
  

  • 4 crumpets (slightly stale works best)
  • 3 large eggs
  • 2 tablespoons milk (dairy or plant-based)
  • to taste salt
  • to taste black pepper
  • 1 tablespoon butter or neutral oil for frying
  • ½ teaspoon dried herbs (optional, such as chives or parsley)
  • optional chili flakes or hot sauce for serving

Instructions
 

  • In a shallow bowl, whisk together the eggs, milk, salt, black pepper, and dried herbs (if using).
  • Place the crumpets in the egg mixture, pressing down gently to help them absorb the liquid. Let soak for about 30 seconds to 1 minute per side.
  • Heat butter or oil in a non-stick skillet over medium heat.
  • Add the soaked crumpets to the skillet and cook for 2–3 minutes per side, or until golden brown and the egg is cooked through.
  • Serve immediately with your choice of toppings, such as grated cheese, sautéed mushrooms, avocado, maple syrup, fresh berries, or chili flakes.
