Ingredients
  

  • 2 ears corn (about 1 cup kernels), grilled or charred
  • 3 ripe avocados, peeled and pitted
  • 1 lime juiced
  • 1/4 cup finely diced red onion
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño seeded and diced
  • 1/4 tsp kosher salt, plus to taste
  • 1/4 cup diced cherry tomatoes (optional)
  • 2 Tbsp cotija cheese (optional)

Instructions
 

  • Grill or char the corn by brushing with olive oil, then grilling over medium-high heat for about 5 minutes until lightly browned. Let the corn cool slightly and remove the kernels from the cob.
  • In a medium bowl, mash the avocados with lime juice until chunky or smooth, depending on your preference.
  • Stir in the charred corn, diced red onion, cilantro, jalapeño, and kosher salt.
  • Optional: Add the diced cherry tomatoes and crumbled cotija cheese for extra flavor and creaminess.
  • Taste and adjust seasoning if needed. Serve immediately with tortilla chips, tacos, or as a topping for grilled meats.
