Ingredients
  

  • 1 can (15 ounces) black beans drained and rinsed
  • 1 can (15 ounces) black-eyed peas drained and rinsed
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 small red onion finely chopped
  • 1 cup cherry tomatoes halved
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon honey or agave syrup
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • to taste salt
  • to taste pepper

Instructions
 

  • In a large bowl, combine the black beans, black-eyed peas, corn, bell peppers, red onion, cherry tomatoes, avocado, and cilantro.
  • In a small bowl, whisk together olive oil, red wine vinegar, lime juice, honey, chili powder, cumin, garlic powder, salt, and pepper until well combined.
  • Pour the dressing over the vegetable mixture and gently toss to combine.
  • Cover and refrigerate for at least 30 minutes to let the flavors meld together.
  • Serve with tortilla chips, tacos, grilled meats, or as a refreshing salad topping.

Notes

You can adjust the ingredients according to your preference. Add more heat by including jalapeños, or sweeten it with diced mango or pineapple.
