Ingredients
  

  • 1 lb ground beef Can substitute with ground turkey
  • 1 small onion, diced
  • 1 each bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes with green chilies (like Rotel), 10 oz
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup milk or heavy cream
  • 1 tbsp taco seasoning or chili powder
  • to taste salt and pepper For seasoning
  • for dipping tortilla chips or fresh vegetables

Instructions
 

  • In a large skillet, heat oil over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.
  • Add the diced onion, bell pepper, and garlic to the pan. Sauté for 5 minutes until softened and fragrant.
  • Stir in the diced tomatoes with green chilies and taco seasoning or chili powder. Simmer for 2-3 minutes to combine the flavors.
  • Reduce heat to low and stir in the milk or heavy cream. Gradually add the shredded cheeses, stirring constantly until the cheese melts and the dip is smooth.
  • Season with salt and pepper to taste. Once the queso is creamy and well-combined, transfer to a serving dish.
  • Serve warm with tortilla chips, crackers, or fresh veggies for dipping.

Notes

For extra heat, add diced jalapeños or hot sauce.
