Ingredients

  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup dried cranberries, finely chopped
  • 1/2 cup pecans, finely chopped
  • 2 tablespoons fresh parsley, chopped (optional, for a fresh touch)

Instructions

  • In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, salt, and black pepper. Mix until smooth and well combined.
  • Transfer the cheese mixture onto a sheet of plastic wrap. Shape the cheese into a log or oval, using the plastic wrap to help mold it evenly. Wrap it tightly and refrigerate for at least 1 hour.
  • In a shallow dish, combine the chopped dried cranberries, pecans, and parsley (if using). Mix well.
  • Remove the cheese log from the refrigerator, and carefully unwrap it from the plastic. Roll it in the cranberry-pecan mixture, pressing gently to coat the entire surface.
  • Place the cheese log on a serving platter. Garnish with additional cranberries and pecans for a festive touch if desired.
