Ingredients
  

  • 2 large chicken breasts, sliced into thin strips
  • 2 tablespoons Cajun seasoning, divided
  • 2 tablespoons olive oil
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 8 oz fettuccine or penne pasta
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Extra Parmesan, for serving (optional)

Instructions
 

  • Season the chicken strips with 1 tablespoon of Cajun seasoning.
  • In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 5–7 minutes until golden brown and cooked through. Remove from skillet and set aside.
  • In the same skillet, add the sliced bell peppers and minced garlic. Cook for 2–3 minutes until slightly softened.
  • Reduce heat to medium. Add the heavy cream, chicken broth, and remaining Cajun seasoning. Stir to combine and bring to a simmer.
  • While the sauce simmers, cook pasta according to package instructions until al dente. Drain and set aside.
  • Add the cooked chicken, pasta, and Parmesan cheese to the skillet with the sauce. Toss to combine and heat through. Season with salt and pepper to taste.
  • Garnish with fresh parsley and additional Parmesan cheese if desired. Serve warm.
