Creamy Lemon Garlic Chicken Gnocchi Skillet

Ingredients
  

  • 1 lb chicken breast or thighs, cut into 1" pieces
  • 1 lb potato gnocchi
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 lemon zest and juice
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup baby spinach
  • 1/2 cup grated Parmesan cheese
  • to taste salt and freshly ground black pepper
  • to taste garlic powder and lemon pepper
  • optional chopped parsley or extra Parmesan for garnish

Instructions
 

  • Season chicken pieces with salt, pepper, garlic powder, and lemon pepper.
  • Heat olive oil and 2 tbsp of butter in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes, turning occasionally, until golden and cooked through. Remove the chicken and set it aside.
  • In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
  • Stir in the chicken broth, lemon zest, and lemon juice to deglaze the pan.
  • Pour in the heavy cream and bring to a gentle simmer.
  • Add the gnocchi to the skillet and cook for 5-7 minutes, stirring occasionally, until the gnocchi is tender and the sauce thickens.
  • Stir in the Parmesan cheese and spinach. Let the spinach wilt and the sauce become creamy.
  • Return the cooked chicken to the skillet and warm everything through.
  • Serve immediately, garnished with fresh parsley or additional Parmesan if desired.
