Instructions
Season chicken pieces with salt, pepper, garlic powder, and lemon pepper.
Heat olive oil and 2 tbsp of butter in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes, turning occasionally, until golden and cooked through. Remove the chicken and set it aside.
In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
Stir in the chicken broth, lemon zest, and lemon juice to deglaze the pan.
Pour in the heavy cream and bring to a gentle simmer.
Add the gnocchi to the skillet and cook for 5-7 minutes, stirring occasionally, until the gnocchi is tender and the sauce thickens.
Stir in the Parmesan cheese and spinach. Let the spinach wilt and the sauce become creamy.
Return the cooked chicken to the skillet and warm everything through.
Serve immediately, garnished with fresh parsley or additional Parmesan if desired.
