Ingredients
  

  • 12 oz pasta (fettuccine, linguine, or penne)
  • 1 lb large shrimp, peeled and deveined
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 0.5 teaspoon red pepper flakes (optional)
  • 0.5 cup sun-dried tomatoes, chopped
  • 0.5 cup chicken broth (or seafood broth)
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt (adjust to taste)
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 0.25 cup fresh basil or parsley, chopped
  • 1 tablespoon salt (for pasta water)

Instructions
 

  • Bring a large pot of salted water to a boil.
  • Cook pasta according to package instructions until al dente. Drain and set aside.
  • Pat shrimp dry and season with salt, pepper, and paprika.
  • Heat olive oil and butter in a large skillet over medium-high heat.
  • Cook shrimp for 2 minutes per side until pink and opaque. Remove and set aside.
  • In the same skillet, add garlic, red pepper flakes, and sun-dried tomatoes. Sauté for 1 minute.
  • Pour in chicken broth and scrape up any browned bits from the pan.
  • Stir in heavy cream, parmesan, Italian seasoning, salt, and pepper. Simmer for 3-4 minutes until slightly thickened.
  • Add lemon juice and stir well.
  • Return shrimp and cooked pasta to the skillet. Toss to coat in the creamy sauce.
  • Simmer for 2 minutes to allow flavors to meld.
  • Garnish with fresh basil or parsley and serve immediately with extra parmesan if desired.
