Ingredients
  

  • 4 medium Russet potatoes (or Yukon Gold)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese (freshly grated preferred)
  • 2 cloves fresh garlic (minced)
  • 1 teaspoon Italian seasoning (or dried oregano)
  • 1 tablespoon fresh parsley (chopped, optional for garnish)
  • 1/4 teaspoon red pepper flakes (optional, for garnish)

Instructions
 

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Wash and peel the potatoes if desired, then cut them into thin strips of even thickness. A mandoline slicer or sharp knife works best for consistent cuts.
  • Soak the cut fries in cold water for 30 minutes to remove excess starch. Drain thoroughly and pat dry with paper towels to ensure crispiness.
  • In a large mixing bowl, toss the dried fries with olive oil, garlic powder, paprika, salt, black pepper, and Italian seasoning until evenly coated.
  • Arrange the seasoned fries in a single layer on the prepared baking sheet, ensuring they are not overcrowded to allow for even crisping.
  • Bake the fries for 20 minutes, then flip them using tongs or a spatula. Return to the oven and bake for an additional 10-15 minutes, or until golden brown and crispy.
  • As soon as the fries come out of the oven, toss them gently with minced garlic and grated Parmesan cheese. The residual heat will help melt the cheese slightly.
  • Garnish with chopped fresh parsley and extra Parmesan cheese. Add red pepper flakes if you prefer a spicy kick.
  • Serve immediately with your favorite dipping sauce, such as ketchup, aioli, ranch, or marinara.
