Ingredients
  

  • 1 lb ground lamb
  • 2 tablespoons cumin seeds
  • 1 teaspoon ground Sichuan peppercorns
  • 3 dried red chilies
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 1 medium onion, chopped
  • 2 tablespoons vegetable oil
  • 3 cups cooked rice
  • 1 cup chicken or vegetable stock
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fresh cilantro, chopped
  • 2 spring onions chopped
  • 1 tablespoon Thai basil (optional)

Instructions
 

  • Heat oil in a skillet over high heat. Add ground lamb and cook until crispy and golden, about 6-8 minutes. Remove from skillet and set aside.
  • In the same pan, sauté garlic, ginger, dried chilies, and onion until fragrant and softened, about 3-4 minutes.
  • Add cumin and Sichuan pepper to the pan and stir to coat the aromatics. Return the crispy lamb to the pan and stir to combine.
  • Pour in chicken stock, soy sauce, and oyster sauce. Stir to combine and simmer for 2-3 minutes to allow the flavors to meld.
  • In serving bowls, add warm cooked rice. Ladle the lamb mixture and broth over the rice.
  • Garnish with fresh cilantro, spring onions, and Thai basil (if using). Serve hot and enjoy!
