Instructions
Preheat the griddle or flat-top grill to medium-high heat (375-400°F). Lightly oil the surface to prevent sticking.
Pat the chicken wings dry with paper towels to remove excess moisture.
In a large bowl, toss the wings with olive oil, salt, black pepper, garlic powder, smoked paprika, onion powder, and cayenne pepper if using.
Place the wings on the hot griddle spaced apart to avoid overcrowding.
Cook the wings for 8-10 minutes per side, flipping occasionally, until the skin is golden brown and crispy.
In the last few minutes of cooking, add butter to the griddle to enhance crispiness and flavor, continue flipping until internal temperature reaches 175°F.
