Ingredients
  

  • 2 large sweet potatoes, peeled and cut into thin fries
  • 2 tablespoons cornstarch or arrowroot starch
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • to taste salt
  • to taste black pepper
  • optional fresh parsley for garnish

Instructions
 

  • Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  • Place sweet potato fries in a large bowl of cold water and soak for at least 30 minutes. Drain and pat completely dry with paper towels.
  • In a dry bowl, toss the fries with cornstarch until evenly coated.
  • Add olive oil, garlic powder, smoked paprika, salt, and pepper. Toss until well coated.
  • Spread fries in a single layer on the baking sheet, making sure they are not touching.
  • Bake for 15 minutes, flip the fries, and bake for another 10-15 minutes, or until crispy and browned.
  • Remove from oven, sprinkle with extra salt if desired, and garnish with fresh parsley before serving.
