Ingredients
  

  • 1.5 to 2 pounds boneless, skinless chicken breasts or thighs
  • 6 ounces box stuffing mix (such as Stove Top)
  • 10.5 ounces can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup sour cream or Greek yogurt
  • 2 cups fresh or frozen green beans, trimmed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme (optional)
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon butter, cut into small pieces (optional)

Instructions
 

  • Lightly grease the slow cooker with nonstick spray.
  • Place chicken breasts in the bottom of the crock pot. Season with garlic powder, onion powder, salt, pepper, and thyme.
  • Spread green beans evenly over the chicken.
  • In a bowl, combine cream of chicken soup, sour cream, and chicken broth. Pour mixture over the green beans and chicken.
  • Sprinkle the stuffing mix evenly over the top. Scatter butter pieces over the stuffing.
  • Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until chicken reaches 165°F (75°C) and is tender.
  • Before serving, gently fluff the stuffing with a fork to combine with the sauce.
  • Serve hot, optionally with cranberry sauce, gravy, salad, or dinner rolls.
