Ingredients
  

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup (or cream of celery/mushroom)
  • 1 cup milk or heavy cream
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp poultry seasoning (optional)
  • 2 cups frozen mixed vegetables (peas, carrots, corn, optional)
  • 1 can (16 oz) refrigerated biscuit dough (e.g., Pillsbury Grands)
  • 1 tbsp all-purpose flour (to prevent sticking)
  • 1 tbsp butter (optional, for richness)

Instructions
 

  • Add chicken, onion, garlic, chicken broth, cream of chicken soup, thyme, parsley, salt, black pepper, poultry seasoning, and butter to the slow cooker.
  • Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until the chicken is tender.
  • Remove the chicken and shred it using two forks. Return shredded chicken to the slow cooker.
  • Stir in milk and frozen mixed vegetables.
  • Cut biscuit dough into 1-inch pieces and toss with flour to prevent sticking.
  • Drop biscuit pieces gently into the slow cooker, placing them on top of the broth.
  • Cover and cook on HIGH for 1 hour, or until dumplings are fluffy and cooked through. Stir occasionally, but gently.
  • Serve hot, garnished with fresh parsley if desired.
