Ingredients
  

  • 2 lbs boneless, skinless chicken thighs or breasts
  • 1/2 cup honey
  • 1/4 cup soy sauce (low-sodium preferred)
  • 2 tbsp ketchup
  • 1 tbsp rice vinegar or apple cider vinegar
  • 4 cloves garlic, minced
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp sesame seeds (optional, for garnish)
  • 2 tbsp green onions, chopped (optional, for garnish)

Instructions
 

  • In a small bowl, whisk together honey, soy sauce, ketchup, vinegar, and garlic.
  • Place the chicken thighs or breasts in the crockpot. Pour the honey garlic sauce over the chicken, making sure to coat it evenly.
  • Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
  • Once the chicken is cooked, remove it from the crockpot and set aside. In a small bowl, mix cornstarch and water to create a slurry.
  • Stir the cornstarch slurry into the sauce in the crockpot. Cover and cook on high for 10-15 minutes, or until the sauce thickens.
  • Return the chicken to the crockpot and coat it with the thickened sauce. You can serve the chicken whole or shred it for easier serving.
  • Garnish with sesame seeds and green onions, if desired. Serve over rice, noodles, or vegetables for a complete meal.
