Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
In a large skillet over medium heat, cook ground beef and onion until beef is browned and onion is soft. Drain excess fat.
Add taco seasoning and water to the skillet. Simmer for 3-5 minutes until thickened.
Stir in cream of mushroom soup, sour cream, Rotel, and 1 cup of shredded cheese. Mix until combined and heated through.
Spread half of the crushed Doritos in the bottom of the prepared baking dish. Top with the beef mixture.
Sprinkle remaining Doritos on top and finish with the remaining 1 cup of cheese.
Bake for 20–25 minutes or until cheese is melted and bubbly.
Top with optional toppings before serving if desired.
