Ingredients
  

  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1 can (10 oz) Rotel (diced tomatoes with green chilies), drained
  • 2 cups shredded cheddar cheese or Mexican blend, divided
  • 1 bag (9.75 oz) nacho cheese Doritos, slightly crushed
  • to taste optional toppings: diced tomatoes, sliced olives, chopped lettuce, green onions, jalapeños

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  • In a large skillet over medium heat, cook ground beef and onion until beef is browned and onion is soft. Drain excess fat.
  • Add taco seasoning and water to the skillet. Simmer for 3-5 minutes until thickened.
  • Stir in cream of mushroom soup, sour cream, Rotel, and 1 cup of shredded cheese. Mix until combined and heated through.
  • Spread half of the crushed Doritos in the bottom of the prepared baking dish. Top with the beef mixture.
  • Sprinkle remaining Doritos on top and finish with the remaining 1 cup of cheese.
  • Bake for 20–25 minutes or until cheese is melted and bubbly.
  • Top with optional toppings before serving if desired.
