Ingredients
  

  • 3 1/2 cups all-purpose flour (for homemade dough)
  • 2 1/4 teaspoons instant yeast
  • 1 cup warm milk (110°F/45°C)
  • 1/4 cup granulated sugar (for dough)
  • 1/3 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 cup brown sugar (for filling)
  • 2 teaspoons ground cinnamon
  • 1/4 cup unsalted butter, softened (for filling)
  • 1 cup powdered sugar (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)
  • 2-3 tablespoons milk or heavy cream (for glaze)

Instructions
 

  • Activate Yeast: In a small bowl, mix warm milk, instant yeast, and 1 teaspoon of granulated sugar. Let sit for 5 minutes until foamy.
  • Mix Wet Ingredients: In a large mixing bowl, combine melted unsalted butter, eggs, and granulated sugar. Stir in the yeast mixture until fully incorporated.
  • Incorporate Dry Ingredients: Gradually add all-purpose flour and salt to the wet ingredients, mixing until a dough forms. Knead on a floured surface for 8-10 minutes until smooth and elastic.
  • Rise: Place the dough in a greased bowl, cover with plastic wrap or a kitchen towel, and let rise for 1 hour or until doubled in size.
  • Roll Out Dough: On a floured surface, roll the dough into a large rectangle, about 1/4-inch thick.
  • Spread Filling: In a small bowl, mix brown sugar, ground cinnamon, and softened butter. Spread this mixture evenly over the dough, leaving a small border around the edges.
  • Roll & Cut: Starting from one long side, tightly roll the dough into a log. Slice the log into 8-12 equal pieces using a sharp knife or dental floss.
  • Shape Bunny Ears: Take each roll and uncoil the top slightly. Twist the unrolled ends into loops to form bunny ears.
  • Second Rise: Place the shaped rolls in a greased baking dish, cover, and let rise for 30 minutes.
  • Preheat Oven: Set your oven to 350°F (175°C).
  • Bake: Bake the rolls for 18-22 minutes, or until golden brown.
  • Glaze: In a small bowl, whisk together powdered sugar, vanilla extract, and milk or heavy cream until smooth. Drizzle over the warm rolls.
  • Decorate: Use pastel sprinkles, colored icing, mini chocolate chips, or cream cheese frosting to decorate the bunny faces.
