Ingredients
  

  • 1.5 pounds baby or regular potatoes
  • 1 teaspoon salt
  • enough water to cover potatoes
  • 2 tablespoons butter (optional)
  • to taste fresh herbs like parsley or dill (optional)

Instructions
 

  • Wash and scrub the potatoes thoroughly. Cut large potatoes into even chunks; leave baby potatoes whole.
  • Place potatoes in a large pot and cover with cold water by about 1 inch. Add salt.
  • Bring to a boil over medium-high heat, then reduce to a gentle simmer.
  • Cook until potatoes are fork-tender: 10-12 minutes for baby potatoes, 15-20 minutes for medium chunks.
  • Drain potatoes well in a colander and return to the pot. Let steam off excess moisture for a minute.
  • If desired, toss with butter and sprinkle with fresh herbs before serving.
