Ingredients
  

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup buffalo wing sauce
  • 2 tbsp unsalted butter, melted
  • for frying vegetable oil
  • to serve ranch or blue cheese dressing
  • optional celery sticks

Instructions
 

  • Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  • In a shallow bowl, combine flour, garlic powder, paprika, salt, and black pepper.
  • Place beaten eggs in a separate bowl and panko breadcrumbs in another.
  • Coat each chicken piece first in the flour mixture, then dip into the eggs, and finally coat thoroughly with the breadcrumbs.
  • Fry the chicken bites in batches for 4-5 minutes, or until golden brown and fully cooked. Drain on paper towels.
  • In a clean bowl, mix buffalo wing sauce with melted butter until combined.
  • Toss the fried chicken bites in the buffalo sauce until evenly coated.
  • Serve immediately with ranch or blue cheese dressing and celery sticks on the side if desired.
