These bite-sized churro balls are crispy on the outside, soft on the inside, and coated in a sweet cinnamon-sugar mix. Perfect for parties, snacks, or satisfying a sweet tooth!
In a saucepan, combine water, butter, salt, and 1 tablespoon of granulated sugar. Bring to a boil over medium heat.
Reduce heat to low and add the flour all at once. Stir continuously until the dough forms a ball and pulls away from the sides of the pan.
Remove from heat and let the dough cool for 5–10 minutes.
Beat in the eggs one at a time, mixing well after each addition until smooth. Stir in the vanilla extract.
Heat about 2 inches of vegetable oil in a deep pot or skillet to 350°F (175°C).
Use a small cookie scoop or spoon to drop tablespoon-sized portions of dough into the hot oil. Fry in batches for 3–4 minutes, turning occasionally, until golden brown.
Remove the fried churro bites with a slotted spoon and drain on paper towels.
In a bowl, mix 1/2 cup granulated sugar with 1 teaspoon ground cinnamon. Toss the warm churro bites in the cinnamon-sugar mixture to coat evenly.
Serve immediately, optionally with dipping sauces like chocolate ganache or dulce de leche.
