Easy Churro Bites

Ingredients
  

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 2 inches vegetable oil (for frying)
  • 1/2 cup granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)

Instructions
 

  • In a saucepan, combine water, butter, salt, and 1 tablespoon of granulated sugar. Bring to a boil over medium heat.
  • Reduce heat to low and add the flour all at once. Stir continuously until the dough forms a ball and pulls away from the sides of the pan.
  • Remove from heat and let the dough cool for 5–10 minutes.
  • Beat in the eggs one at a time, mixing well after each addition until smooth. Stir in the vanilla extract.
  • Heat about 2 inches of vegetable oil in a deep pot or skillet to 350°F (175°C).
  • Use a small cookie scoop or spoon to drop tablespoon-sized portions of dough into the hot oil. Fry in batches for 3–4 minutes, turning occasionally, until golden brown.
  • Remove the fried churro bites with a slotted spoon and drain on paper towels.
  • In a bowl, mix 1/2 cup granulated sugar with 1 teaspoon ground cinnamon. Toss the warm churro bites in the cinnamon-sugar mixture to coat evenly.
  • Serve immediately, optionally with dipping sauces like chocolate ganache or dulce de leche.
